  • 2-3 pound sirloin roast
  • Kosher salt
  • Garlic powder
  • Oregano
  • Chili flakes (optional)
  • Good olive oil

instructions

  1. Preheat oven to 450F
  2. Pat roast dry and place on a roasting rack on a half baking sheet so the roast is elevated over the baking sheet.
  3. Place the roast, fat side up on the rack.
  4. Season the roast well with kosher salt, garlic powder, oregano and chili flakes if using.
  5. Drizzle olive oil over the roast.
  6. Place the roast in the oven for 10 minutes at 450F
  7. Lower the heat to 250F for 30 minutes per pound, roast until the beef reads 145F for medium-rare via instant-read thermometer
  8. Let beef rest, tented with foil for 15 minutes.
  9. If serving immediately, cut slices about 1/2 inch thick; otherwise, let the beef cool completely, refrigerate and slice thin with a sharp chef's knife or meat slicer for sandwiches.
