ingredients

  • 2 or 3 pounds of chicken wings/flats
  • Frank's hot sauce (or whatever hot sauce you want)
  • Kosher salt
  • Garlic powder

instructions

  1. Place parchment paper on a full sized baking sheet
  2. Place the wings/flats on the parchment paper, making sure that the sheet is big enough to hold all of the chicken in a single layer.
  3. Preheat the oven to 365F
  4. Generously season the chicken wings with kosher salt and garlic powder
  5. Place a large skillet over medium-high heat
  6. Add about 2 tablespoons of neutral oil to the skillet
  7. Sear the chicken wings, working in batches so that the skin crisps up (about 7 minutes a side or so), returning each batch back to the parchment lined baking sheet.
  8. Once all of the chicken has been seared, coat with your hot sauce
  9. Place the chicken in the oven and bake for 30 minutes
  10. Remove from oven and temp check for doneness - if using smaller wings timing should be good, if the wings are massive, make sure to check the temp (should register at least 165F with an instant-read thermometer)
